Are you open to suggestions further afield? The Palouse area finally got a decent truck, in Lewiston, Tacos Cecy. They came over from the Walla Walla/Milton-Freewater area which is an killer taco truck epicenter. They get their tortillas from the tortilleria there, and tap into the Tri-Cities supply chain for things like chiles Manzano, a critical ingredient for the taco albanil.
